This is a quick and simple pancake recipe that can be tweaked in an infinite number of ways… have fun mixing and matching.
Recipe makes: 3-4 pancakes.
- 1 cup almond meal (finely ground)
- 3 eggs
- 1/4 tsp vanilla essence
- 1/4 tsp cinnamon or nutmeg
- blueberries, strawberries or diced fruit of choice
- Mix ingredients together.
- Heat oil pan over medium flame.
- Pour in to desired pancake size.
- Cook until underside is brown and then flip.
- Serve with blueberries/strawberries/fruit on top.
